[FOOD] The Chocolate Whoopie Pie Recipe

Hello lovelies! Happy Sunday 🙂

I haven’t posted in a week because I didn’t know what to post about and have been a little busy.What have you been doing this week? I feel like this blog has taken a back-seat in my life but with a week off I will hopefully be able to prepare and get back on track!

Anyway, yesterday I got in the kitchen and decided to try baking something new and different – Whoopie Pies! If you don’t know what Whoopie Pies are, they are two cake/cookies sandwiched together with a filling.

The Whoopie Pies I made are rich, soft and indulgent chocolate cookies with a whipped chocolate ganache filling. Someone scream YUM YUM!

The Content

For the Pies:

  • 1 Egg
  • 75g Unsalted Butter
  • 125g Caster Sugar
  • 5 tbsp plain Yoghurt
  • 2 tbsp Milk
  • Splash of Vanilla Extract
  • 200g Plain Flour
  • 80g Cocoa Powder
  • 3/4 tsp Bicarbonate of Soda
  • 1/4 tsp Baking Powder

For the Ganache:

  • 200g Dark Chocolate
  • 240ml Double Cream
  • A pinch of Salt

The Method

1. Cream together the sugar and butter with an electric mixer, and then add in the egg.

2. Mix the milk, yoghurt and vanilla together and using a wooden spoon quickly stir this into the egg mix.

3. Now add all the other (dry) ingredients into this batter and fold it together.

4. Put the mixture into the fridge for 20 minutes and in the mean time, turn the oven to 170C and line two trays with baking paper. 

5. After the twenty minutes is up, spoon around 6-7 circles of the mix onto each tray. They should be a little smaller than the size of your palm. Pop into the oven for around 15 minutes, until they look and feel firm but still maintain a spongey consistency. 

6. Leave the pies to cool to room temperature, and in this time you can get on with the filling! You want to pop the cream in a saucepan and let it boil on medium heat, then take it off the heat and add the chopped chocolate and salt in. Let this sit before stirring the ganache to a shiny, smooth texture.

7. Leave the ganache to completely cool to room temperature, but making sure you regularly whisk the mixture so it doesn’t harden. After it’s cool, use an electric whisk to whizz and firm up the ganache until thicker and fluffier.

8. Spoon the ganache onto half of the whoopie pies and sandwich the others on top. Et Voila, Chocolate Whoopie Pies complete!

[FOOD] The Oreo Cupcake Recipe

Happy Monday! Just kidding, I know Happy should never be associated with the word Monday. I’m sorry. Anyway, for today’s post I’m going to be sharing my oreo cupcake recipe that I promised a while ago when I wrote about my Nutella Cupcake Recipe (read here). These were excellent and can I just say my buttercream was on point. Sounds cocky, but damn it was good. I am actually eating this whilst eating a red velvet cupcake hehe! I love cake, okay?! 😉

So the Oreo Cupcakes have exactly the same cake batter as the Nutella cupcakes, so I’m going to just put that in here.

The Content:

For the cake:

– 40g Butter, room temperature

– 1 egg

– 120ml Milk

– 100g Plain Flour

– 140g Caster Sugar

– 20g Cocoa Powder

– 1 1/2 tsp Baking Powder

– Oreos!

For the frosting:

– 200g Icing Sugar

– 80g Unsalted Butter

– 20ml Milk

– Packet of Oreos

The Method:

  1. Preheat the oven to 170 degrees Celsius and line a 12 hole cupcake tray with cupcake paper cases.
  2. Cream together the butter and sugar using a whisk and gradually add in all the dry ingredients.
  3. Slowly pour in the milk, beating well until all ingredients are well mixed.
  4. Add the egg in and beat well.
  5. Before you put the batter into the cases, plonk an oreo in each cupcase for a cheeky surprise at the end!
  6. Spoon the mix into the cupcake cases and fill each one up two thirds of the way.
  7. Bake in the oven for 20 minutes, or until sponge bounces back when touched. Leave the cupcakes to cool completely while you get on with the frosting!
  8. The frosting is simple. All you need to do is whizz together the ingredients using a hand whisk or fork and then simply crush up half of the oreos in a sandwich bag, and add these in too! Mix well and you’re ready for piping.
  9. Decoratively ice the frosting on and finish with half an oreo on each cupcake for even more yumminess!

And you are done! The perfect recipe for the most delicious oreo cupcakes. I couldn’t recommend trying this recipe enough – I’m not a massive fan on oreos but these are just divine!

[FOOD] The Nutella Cupcake Recipe

Hello lovelies! I hope you’re all well 🙂

For today’s post I’m going to be sharing with you a recipe, which I haven’t done since June/July?! Feels like forever!

Anyway, I was in the kitchen on a lazy Sunday and I decided to try and master my cupcake making skills, and lemme tell you, I didn’t do half bad!! I made a batch of Oreo cupcakes (recipe soon) and a batch of Nutella cupcakes. They were both delicious and I actually just demolished one of each before writing this post, oops… 😉

The cupcake recipe is SO simple and there’s no fancy decorating required, so I’m sure any person of any baking ability could make these! If you’re addicted to nutella or you’re a chocoholic just like me, then get off your bum and get your apron on because you’ll want to be baking these now!

The Content:

For the cake

– As much Nutella as you desire!

The Method:

  3. Slowly pour in the milk, beating well until all ingredients are well mixed.
  4. Add the egg in and beat well.
  5. Spoon the mix into the cupcake cases and fill each one up two thirds of the way. Bake in the oven for 20 minutes, or until sponge bounces back when touched. Leave the cupcakes to cool completely while you get on with the frosting!
  6. When cupcakes are cold, hollow out a small section in the centre of each one and fill with a BIG dollop of Nutella 🙂
  7. To make the frosting, beat the icing sugar and butter together. Once combined, add the milk. Make sure it doesn’t go too runny!
  8. Stir in the Nutella by hand until evenly mixed in. It’s important to keep trying it so it doesn’t get too sweet 😉  Spread the frosting on top of the cupcakes and decorate with hazelnuts (I did about 3 per cupcake).

And that’s it! You should have something that looks like this:

10 Things That Make Me Happy :)

Hello my lovely ones! I hope you all have had a lovely week. I’ve had a very relaxing but fun week off, but now I am not prepared to wake up at 7:00am on a Monday morning, oh hell no. Anyway, on a more positive note, I wanted to write a post about 10 things that make me happy because I think it’s a really nice idea! Now I’m going to write about 10 different things, rather than the usual like family, friends and technology because that’s self explanatory. Enough with the rambling, let’s get on with the post!

1. The first thing that makes me happy is when I’ve studied hard for a test, and then my report is you know, fairly good, and my parents are proud of me. Teenagers like me don’t like to show how relieved we are, but honestly it’s the best feeling ever when you’re parents are proud.

2.Now some people are going to think, wow, you’re such a weirdo, but I don’t really care to be honest. I love having a clean room, and after spending hours rearranging and reorganising or cleaning your room I can assure you the results are very satisfactory. I love it!

3. I know that a lot of beauty & fashion bloggers will agree with me on this one, that there’s nothing better than coming home from a hard, tiring day to a package full of goodies! I literally jump up and down like a 5 year old.

4. Baking is so lovely for me and I always feel very relaxed whilst doing it! Also, the end results are to die for and I know no one can resist a cheeky lick of the bowl…

5. I absolutely LOVE summer. Everything about it is perfect. My birthday is then too! I love having 6 weeks off and eating ice cream and drinking mocktails. The beach, blogging everyday and longer days. Why couldn’t summer last forever? 😦

6. The most satisfactory thing is wearing new clothes for the first time. Such a lovely feeling. But my favourite is when I have new Pj’s to put on. Amazing feeling right there.

7. This is another really odd one, but I love going into home stores. Seeing those lovely rooms always make me a bit jealous though. 

8. I love love love Friday’s. They make me so happy because it means no more school for two whole days and it also means food day. Not that any other day does not include ridiculous amounts of food! Friday nights for me is either spent with a friend or by myself, watching a sad movie, eating some yummy food that my mum has made me and painting my nails. Perfect.

9. I really enjoy going to the park with my friends. Sometimes it’s fun to be a bit immature, and it really reminds you of your childhood.

10. The final thing that I am going to talk about that makes me happy, is performing. It’s such a good feeling when you’ve been to so many rehearsals, performed the same thing over and over again to only one person and then all of a sudden there’s a whole audience of people watching you perform in costume and cheesy smiles. When it’s all over, all you want to do is do it again.

The Chocolate Cookie Monster Recipe

Well hello there lovelies! It’s very nearly Christmas, and I am very excited! For today’s post I am back with another recipe for you all and this is one of my all time favourites. I love doing recipe posts and I think you guys enjoy reading them too, so I hope you enjoy this one!

As Christmas is rapidly approaching I thought I would do a gift idea post which is also a recipe that can be made any time of the year. If you’re a bit of a chocoholic like me then you will probably (most definitely) like this recipe and you can customise it to make it your own too!

Today I’m going to be giving you a recipe for these cookie monster cookies! These cookies are the ones that look shop brought, the ones that make your tummy rumble, and the ones that are gooey in the middle but chewy on the outside. If that doesn’t sound tempting enough for you, take a look at this picture of what it looks like inside.

So if you want to make these beautiful cookies that are like pringles (you can’t just have one), then keep reading!

Triple Chocolate Cookies, Makes 12

The Content:

* 200g unsalted butter

*300g caster sugar

*1 large egg

*275g self-raising flour

*75g cocoa powder

*chocolate (loads of it)

*a splash of milk.

The Making:

Firstly, put your butter into a bowl and put it in the microwave for a few seconds, so it is easier to work with. Then add in the sugar and mix mix mix. I prefer using a wooden spoon for this but it’s up to you what you choose to mix with.

Now crack in an egg and mix again.

It’s time to add your dry ingredients! Chuck in some self raising flour, cocoa powder and the chocolate broken into bits. Give it a good mix and be prepared for aching arms and hands. If the dough seems too dry, then add in a splash of milk to moisten it.

Now I’m going to turn the oven on to 200 degrees (gas mark 4). And then line two baking trays with baking parchment or grease the trays with butter.

Divide the dough into twelve equal balls and place them on the tray, leaving enough space between each ball because they do spread easily.

Now pop the cookies into the oven for 10 minutes and enjoy eating that cookie dough ‘left overs’. I know you want to… 😉

After they are done in the oven they will come out super sloppy, but give them 10-40 minutes to cool and they will harden up (if you can resist of course).

Now it’s time for eating. Eat with a glass of milk whilst snuggled up watching a movie. I reccomend watching a movie/programme related to food because then you can feel that same feeling that the people on TV do when eating.

And that’s it! That is all you need to do to create these gorgeous cookies. Let me know if you try them out and how they taste!

Gooey Chocolate Melting Middles Recipe (Gu Duplicate)

Well hello there everybody! Today I’ve got a delicious recipe for you, perfect for this time of year. I posted the same recipe a similar time last year, but I don’t think anyone saw it as my blog was pretty poo back then. Anyway, today I’m back, and I’m back with one of my favourite recipes of all time, a pudding that no one can top, so I decided to share it with you because you deserve it 😉

This Gu like pudding is a pudding that turns heads and people seem to ask me “No… You didn’t make that!”. Oh but I did. I made it all by myself and I can say I’m very proud, seeing as my baking skills have gone down quite a bit lately…

The chocolate pudding is cake like on the outside, but when you bite into it, mountains of gooey, oozing chocolate pours out. Sound good to you?

So anyway, if you want to know how to make this irresistible little pud, then keep reading!

You Will Need:

*110g good dark chocolate, finely chopped or grated

*2 eggs

*2 egg yolks

*110g butter

*Cocoa powder ( as much as you like!)

*110g caster sugar, plus 1bsp for coating

*110g plain flour

Equipment:

4 Dariole moulds. I use ramekins because I don’t have any moulds. Either works fine.

How to do it:

Grease the moulds with butter. Then mix a little cocoa with the tbsp of sugar. Then, put the mix into the moulds/ramekins, and tilt and turn them until the mix fully sticks to the butter. Tip out any excess.

Next, melt the butter in a pan. Take it off the heat, and add the chocolate in and leave it to melt. Whilst you are waiting for the chocolate to melt into the butter, whisk the eggs in a large bowl until they start to thicken. Gradually add in the sugar, and keeeep whisking! The mix hould be thick, and when you leave it for 3 minutes or so it should look pale. Now stir the melted butter and chocolate and slowly pour little bit by bit into the egg mix. Whisk whisk whisk! Now stir in the flour and using a wooden spoon, draw a figure of 8 until all the flour is incorporated in.

Now preheat the oven to 180 degrees C, or Gas mark 4. And then divide the mix into the moulds and bake for 10-12 minutes. The tops should be firm but the middle should sink down slightly.

Allow to cool for 2-3 minutes and enjoy!
